How We Make Butters

Here's an overview of the process involved in making our handmade butters:

 Sourcing high-quality cream: We start by carefully selecting the finest cream available. The cream can be obtained from various sources, such as local farms or dairy suppliers, ensuring it is fresh and of premium quality.

  1. Churning: The cream is poured into a churn, a vessel specifically designed for the butter-making process. Traditionally, a churn consists of a large container with a central paddle mechanism. The paddle is rotated manually or by mechanical means to agitate the cream.
  2. Agitation: As the churn rotates, the cream is agitated, causing the fat globules to break down. This process separates the butterfat from the liquid portion of the cream, known as buttermilk. The agitation causes the fat to clump together, forming butter.
  3. Washing and kneading: Once the butter has formed, it is necessary to separate it from the buttermilk. Cold water is added to the churn, and the butter is kneaded and washed. This helps remove any residual buttermilk, which can cause the butter to spoil quickly. The washing process also helps improve the butter's texture and flavor.
  4. Salt (optional): At this stage, salt can be added to the butter according to preference. Salted butter is popular due to its enhanced flavor and longer shelf life, as salt acts as a natural preservative. However, unsalted butter is also an option for those who prefer a purer butter taste or for specific recipes that require precise salt measurements.
  5. Molding: The butter is then shaped into molds or rolled into logs, depending on the desired presentation. Some producers use wooden molds to imprint decorative patterns on the surface of the butter.
  6. Packaging: Once the butter has been molded, it is typically wrapped in parchment paper or wax paper to preserve its freshness. This packaging also helps protect the butter from external odors and light, which can affect its flavor and quality.
